1 tbsp olive oil
1 large onion, nely diced
4 garlic cloves
1 cup carrots, thinly sliced (approx. 2) 1 cup celery, thinly sliced (approx. 2) 1 cup zuchinni, thinly sliced
1 lb groud beef
1 1/2 tsp Italian herb seasoning
1 can or 28oz diced tomatoes
1 cup fresh spinach, chopped
1/4 cup fresh parsley, chopped
1/2 cup broken whole wheat spaghetti Salt & pepper to season
This recipe is dairy free and gluten free. It makes 6 cups of soup and is suitable for the freezer up to 6 months!
Italian Beef Style Soup
1/2 cup servings
• In a large saucepan, sauté onion and garlic
with olive oi for 2 minutes. Add carrot, celery, zucchini, ground beef and Italian seasonsing and cook until meat is cooked through, approx. 10 minutes.
• Add diced tomatoes, chicken broth and tomato paste. Bring to a boil, then reduce heat to simmer for 15 minutes.
• Add spinach, parsley and spaghetti. Simmer for 10 minutes.
• For Baby: remove 1/2 to 1 cup of soup, purée or pulse in a mini processor until desired consistency is reached. Cool and serve.
